Vegetable Soup
Vegetable Soup is an moderately easy dinner. Made with 1 tbsp. vegetable oil, 1/2 c. chopped onion, 2 garlic cloves, minced, 1 (16 oz.) can tomatoes, diced and 1 c. low-sodium chicken broth, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

In medium saucepan over medium-high heat, heat oil.
Add garlic and onion; cook 2 to 3 minutes, stirring.
Add tomatoes with juice, chicken broth, carrots, celery, parsley, basil and pepper.
Bring to a boil.
Reduce heat; cover and simmer 20 minutes.
Add lima beans and water.
Bring to boil.
Reduce heat; simmer 20 minutes.
Makes 6 servings with 90 calories and 3 grams fat.
