Vegetable Frittata
Vegetable Frittata is an moderately easy dinner. Made with 2 tbsp. margarine, butter or spread, 2 medium bell peppers, chopped (1 c.), 1 medium onion, chopped (1/2 c.), 8 eggs and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Melt margarine in ovenproof 10 inch nonstick skillet over medium heat.
Cook bell peppers and onion in margarine, stirring occasionally, until onion is tender.
Beat eggs, salt and pepper in medium bowl.
Stir in 1/2 c. cheese.
Pour egg mixture over pepper mixture.
Cover and cook over medium low heat 8 to 10 minutes or until eggs are set and light brown on bottom.
Set oven control to broil.
Broil frittata with top 4 to 6 inches from heat about 2 minutes or until golden brown.
Cut into wedges.
