Veal Marsala Scallopini
Veal Marsala Scallopini is an moderately easy dinner. Made with 1 lb. thin veal cutlets, 1/3 c. grated parmesan cheese, 1 clove garlic, 1/4 c. butter and 4 or 5 mushrooms, thinly sliced, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Flatten veal and coat with cheese.
Saute meat and garlic in butter until golden brown.
Add butter as needed.
Remove meat and garlic; set aside.
In same butter, saute mushrooms and set aside on top of veal.
To the butter, add pepper, broth and wine; stir until all brown.
Add veal and mushrooms to pan; cook 1 minute over high heat.
Serve at once.
