Uncooked Relish
Uncooked Relish is an moderately easy dinner. Made with 2 c. sweet red peppers, chopped, 2 c. sweet green peppers, chopped, 2 c. white onions, chopped, 4 c. cabbage, chopped and 2 tsp. celery seed, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Chop each vegetable in chopper or blender.
Drain off liquid and discard.
Mix all vegetables with salt and let stand overnight, covered.
The next morning, drain liquid again.
Place vinegar, sugar and spice in a saucepan and bring to a boil.
Spoon vegetable mix into sterile jars.
Cover with pickling solution. Seal at once and process 5 minutes in boiling water bath.
Jars should seal as they cool.
This is a sweet relish.
Good on hot dogs, etc.
