Twice Baked Potatoes
Twice Baked Potatoes is an moderately easy dinner. Made with 6 large potatoes, 3 tbsp. butter, 1 c. dairy sour cream, 2 boiled eggs and 1 tbsp. chopped onion, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Clean and butter 6 large potatoes.
Prick the skins before baking.
Bake at 400° for 1 hour.
Cut potatoes
Slice lengthwise on top of each spud.
Carefully scoop out the insides.
Set aside shells.
Mash potatoes while hot.
Add butter, dairy sour cream (can use more) and boiled eggs.
Beat until fluffy.
Stir in chopped onion and English cheese.
Salt and pepper to taste.
Pile mashed potatoes in shells and sprinkle top with Parmesan cheese, parsley flakes and sour cream.
