Twice Baked Potatoes
Twice Baked Potatoes is an moderately easy dinner. Made with 4 large potatoes (russet), 1/2 c. shredded cheddar cheese, 1/3 c. milk, 1 egg and 2 tbsp. butter or margarine, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Bake potatoes at 350Β° for 1 hour; let cool approximately 15 minutes.
Slice a thin lengthwise strip from top of each potato. Scoop out as much of inside potato without tearing.
In a medium bowl, mix scooped out potato, cheese, milk, egg, butter, salt and pepper.
Beat at medium speed with electric mixer until smooth. Spoon back into each potato shell.
Microwave on High for approximately 5 minutes or until potatoes have thoroughly heated again.
