Turkey Croquettes
Turkey Croquettes is an impressive dinner. Made with 1/4 c. butter, 1/2 c. flour, 2 c. milk, 1/4 tsp. salt and 1/4 tsp. pepper, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Melt the butter in a medium saucepan; then stir in the flour until well blended.
Slowly stir in milk and cook until the mixture thickens, about 5 minutes, stirring constantly.
Season with salt and pepper.
Remove the sauce from heat and pour into large mixing bowl.
Add parsley, scallions, turkey, lemon juice, sage and thyme and blend well.
Cover the bowl and chill until firm about 30 minutes.
Shape mixture into 10 squat cones, roll in bread crumbs, dip into the beaten eggs, and roll in bread crumbs again.
Place on a platter and allow to dry about 10 minutes at room temperature.
Fry in hot fat about 375Β° for about 5 minutes.
Drain and serve immediately.
