Swiss Mushroom Chicken
Swiss Mushroom Chicken is an moderately easy dinner. Made with 4 boneless chicken breasts, 1 egg, lightly beaten, 1 c. crushed butter flavored crackers, 3/4 tsp. salt and 1/2 lb. fresh mushrooms, sliced, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Flatten chicken.
Place egg in a shallow bowl.
Combine cracker crumbs and salt in another shallow bowl.
Dip chicken in egg, then in crumbs.
In an ovenproof skillet, saute mushrooms in 1 tablespoon butter until tender.
Remove and set aside.
In the same skillet, melt remaining butter.
Cook over medium heat for 3 to 4 minutes on each side.
Top each chicken breast with a ham slice, mushrooms and a cheese slice.
Broil 4-inches from the heat for 1 to 2 minutes or until cheese is melted.
