Sweet Potato Apple Casserole
Sweet Potato Apple Casserole is an moderately easy dinner. Made with 1 1/4 lb. sweet potatoes, 1/2 c. water, 1 lb. apples, 1 c. apple juice and 2 tbsp. cornstarch, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Steam the sweet potatoes in 1/2 cup water, 15 to 20 minutes until tender.
Peel and slice lengthwise in 1/2-inch slices. Layer in casserole.
Peel and core apples. Slice 1/2-inch thick and lay on top of the sweet potatoes.
Heat juice to a boil. Combine cornstarch and water.
Add to juice.
Cook until clear and thickened.
Add honey.
Pour sauce over apples and top with 1/3 cup wheat germ. Bake at 350Β° for 30 minutes or until apples are done.
