Sweet And Sour Meatballs(Appetizer) is an moderately easy dinner. Made with 1 1/2 lb. lean ground beef, 1 c. fresh bread crumbs, 1 egg, slightly beaten, 4 tsp. beef flavor bouillon and 1 1/3 c. apricot preserves, this recipe delivers authentic, satisfying flavors. In large bowl, combine beef, crumbs, egg and 2 tsp. bouillon; mix well.
Shape into 1 1/4 inch balls.
In large skillet, brown meatballs, and remove from pan.
Pour off fat.
In same skillet, combine preserves, lemon and remaining bouillon, over low heat, cook and stir, about 10 minutes.
Add meatballs and simmer, uncovered for 10 minutes.
Garnish with parsley if desired.
Makes 4 dozen.
