Super Eggplant Casserole
Super Eggplant Casserole is an moderately easy dinner. Made with 1 large or 2 small eggplants, peeled, 1/4 c. butter, 1/4 chopped onion, 2 medium tomatoes, peeled and diced and 1 lb. ground meat (lean), this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Cut up eggplant into 1-inch square pieces.
Parboil about 5 minutes.
Drain and set aside.
Melt butter in skillet over medium heat.
Add onion, meat and tomatoes and saute about 5 minutes or until tender.
Add meat mixture plus cooked rice and seasonings to eggplant and mix well.
Spoon mixture into buttered casserole dish and sprinkle with cheese.
Bake at 350Β° for 30 to 40 minutes or until the cheese is melted and eggplant is tender.
