Stuffed Zucchini
Stuffed Zucchini is an moderately easy dinner. Made with 4 large zucchini, 3/4 lb. ground beef, 1/4 c. chopped onions, 1/2 c. bread crumbs and 1 egg, beaten, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Cut one thin lengthwise slice from each zucchini.
Cut small slice from each end.
Scoop contents out of each one and set aside. Cook meat and onions in oil.
Mix 1/4 cup tomato sauce with egg and bread crumbs and add to meat and onions.
Blend well and fill zucchini shells.
Place on a greased baking dish.
To the remaining tomato sauce add oregano, minced garlic, basil and salt and pepper to scooped out zucchini.
Pour this mixture over filled shell. Sprinkle with Parmesan cheese.
Bake, covered, 30 minutes at 350Β°, uncovered last 10 minutes.
