Stuffed Artichokes
Stuffed Artichokes is an moderately easy dinner. Made with 4 medium artichokes, lemon juice, 2 c. chopped, fresh mushrooms, 1/2 c. sliced green onion and 1/2 c. butter or margarine, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Remove stems and loose outer leaves from artichokes.
Cut off 1 inch from tops.
Snip off sharp leaf tips.
Brush cut edges with lemon juice.
Place artichokes in steamer basket.
Place over boiling water.
Cover and steam 30 to 40 minutes or until leaf pulls out easily.
(Add more boiling water if necessary.)
Remove artichokes; set aside until cool enough to handle.
Remove center leaves and choke (fuzzy stuff).
