Squash without salt until tender; drain and mash. Braise onion and pepper in half of the butter.

Crush 24 Ritz crackers and squash. Add and pepper to square mixture.

Grated cheese and mix well. Add seasonings and mix. and mix. Beat eggs well and add to mixture. Put casserole dish.

24 more crushed Ritz crackers with remaining butter (melted) and sprinkle on top of casserole.

Bake in a 300Β° oven for 50 minutes or until light brown.

This makes one large or 2 small casseroles.
