Spicy Hot Eggplant Casserole
Spicy Hot Eggplant Casserole is an moderately easy dinner. Made with 1 medium eggplant (about 1 1/2 lb.), peeled and cut into 1/4-inch slices, 1 (10 oz.) can tomatoes with green chilies, drained, chopped and divided, 1/4 c. soft bread crumbs, divided, 1/4 tsp. dried oregano, divided and 1/2 c. no-salt added tomato sauce, divided, this recipe delivers authentic, satisfying flavors. Cook eggplant in small amount of boiling water 5 minutes; drain well.
Layer half the eggplant, tomatoes, bread crumbs, oregano, tomato sauce, Parmesan cheese and Cheddar cheese in a 1 1/2-quart casserole dish coated with cooking spray. Repeat layers, omitting top layer of Cheddar cheese.
Bake in preheated 350Β° oven for 15 minutes. Sprinkle with remaining Cheddar cheese and bake 5 minutes more.
