Southwestern Chicken
Southwestern Chicken is an moderately easy dinner. Made with 4 medium-sized plum tomatoes, 1 medium-sized onion, 1 garlic clove, 1/4 c. packed fresh cilantro or parsley leaves and 1/4 c. lime juice, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Coarsely cut up tomatoes and onion.
In blender at medium speed or in food processor with knife blade attached, blend tomatoes, onion, garlic, cilantro, lime juice and soy sauce until tomatoes and onion are finely chopped.
Place chicken and sauce in a large Ziploc bag and seal, turning chicken to coat well with marinade.
Refrigerate at least 4 hours.
Prepare outdoor grill for barbecuing.
Place chicken on grill over medium heat, reserving marinade.
Cook until golden on both sides, about 10 minutes.
Cook until fork-tender, brushing occasionally with tomato marinade.
