Sour Cream Penuche
Sour Cream Penuche is an moderately easy dinner. Made with 1 c. granulated sugar, 1 c. brown sugar, firmly packed, 2/3 c. commercial sour cream, 1/4 c. butter or margarine and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Combine sugar and cream; heat to boiling, stirring until sugars are dissolved.
Add butter; cover and cook over low heat 3 or 4 minutes.
This dissolves any sugar crystals on the sides of the pan and keeps the candy from sugaring.
Remove cover and boil to 236Β° (soft ball).
Remove from heat and cool to room temperature.
Add vanilla and beat until creamy.
Stir in chopped nuts.
Turn into greased pan and let stand until firm.
Cut into squares.
Makes 1 1/2 dozen large pieces or 1 1/3 pounds.
