Cook, drain and mash eggplant.
In skillet, saute onions, green peppers and butter until vegetables are soft.
Add shrimp, crabmeat, bread crumbs and eggs (slightly beaten) into buttered casserole.
Top with more bread crumbs and grated cheese.
Bake at 250Β° for one hour.
