Seafoam Candy
A divinity-style candy whipped from boiled brown sugar syrup folded into stiff egg whites. Light, airy and crystallizes into pale, foamy peaks.

Dissolve brown sugar and salt in water; add syrup.
Cook, without stirring, to hard ball stage.
Pour gradually over egg whites that have been beaten stiff.
Beat constantly.
Add vanilla and continue beating until cool.
Drop by spoonfuls on wax paper.
