Sea Foam
Sea Foam is an moderately easy dinner. Made with 3 c light brown sugar, 1 c water or 3/4 c water and 1/4 c light corn syrup, 1 t vinegar, 2 egg whites and 1/8 t salt, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Beat egg whites and salt together until stiff.
Cook sugar, water or water & syrup mixture along with vinegar over low heat until sugar is dissolved.
Then cook quickly until hard ball stage, 238 degrees.
Pour syrup mixture over eggs in a thin stream. Beat constantly until thick and creamy.
Add vanilla and nuts.
