Scalloped Oysters
Scalloped Oysters is an moderately easy dinner. Made with 1 qt. fresh oysters, 3 c. waverly wafers, coarsely broken, 1/2 pt. heavy cream, 1/2 c. butter, melted and several dashes nutmeg, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Preheat oven to 400Β°.
Drain oysters; remove liquor.
Coarsely crush wafers by hand.
Melt 1/2 cup butter; combine with oyster liquor and cream.
Butter a 7 x 7-inch casserole dish and line bottom with 1 cup crushed crackers.
Lay one layer of oysters over crackers.
Drizzle 1/3 of cream mixture over oysters. Sprinkle lightly with nutmeg, salt and pepper.
Cover oysters with 1 cup crushed crackers.
Put second layer of oysters on crackers; repeat with 1/3 of cream mixture.
Once again, season.
Top with final cup crushed crackers; drizzle remaining cream mixture over all.
Dot with butter.
Bake for 20 minutes.
