Scalloped Eggplant

Peel eggplant; cut into 1-inch cubes.
Boil in salted water until tender.
Drain well and mash.
Add egg, milk, onion and 1 cup cracker crumbs.
Mix and pour into a greased 1-quart baking dish.
Top with the cheese.
Spread 1/2 cup Ritz cracker crumbs over cheese.
Bake at 350Β° for 30 minutes, or until golden brown.
