Scallop Newburg
Scallop Newburg is an moderately easy dinner. Made with 1 lb. scallops or any combo of seafood, 1/4 c. margarine, 2 c. milk, 4 tbsp. dry sherry and toast points (optional), this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Rinse scallops; drain.
In small-medium saucepan, melt butter over medium heat.
Stir in flour, salt and paprika.
Cook 1 minute, stirring.
Gradually add milk; cook 4 to 5 minutes until thickened (stirring constantly).
Add sherry and scallops; reduce heat to low.
Cook 3 minutes until scallops are opaque and firm.
