Sauerkraut Soup
Sauerkraut Soup is an moderately easy dinner. Made with 5 to 6 c. cold water, 1 lb. bag sauerkraut, 1 large onion, diced, 3 to 4 slices bacon, 6 ribs or ham bone and 2 medium potatoes, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

If using raw meat, preboil and rinse clean.
Pour kraut with juice into pot and cover with cold water.
Bring to a boil and remove from heat.
Drain.
Put kraut in soup pot with 5 to 6 cups water, bay leaf, caraway seed and ham bone or ribs.
Bring to a boil, reduce heat and simmer for 2 hours.
