Saucy Turnips
Saucy Turnips is an moderately easy dinner. Made with 2 lb. fresh turnip greens with roots, 3 slices bacon, 2 tbsp. vinegar, 3/4 tsp. sugar and 3 c. water, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Wash turnip greens and roots; cut in half.
Combine greens, roots, water and salt in a large Dutch oven; bring to a boil. Reduce heat; cover and simmer 1 hour or until greens and roots are tender.
Drain greens, reserving 1 cup liquid.
Set aside.
Cook bacon in a skillet until crisp; remove bacon, reserving drippings in skillet.
Crumble bacon and set aside.
Saute onions in drippings.
Add to greens.
Dissolve flour and sugar in vinegar; stir in the reserved cooking liquid.
Add mixture to greens, stirring constantly, until thickened.
Stir in the bacon.
Yields 6 servings.
