Sahpye
Sahpye is a Shan-Kachin noodle plate of rice vermicelli, minced beef or pork, cucumber, lettuce, herbs, and a sharp tamarind-lime chile sauce. It is refreshing, spicy, and lightly bitter.

Soak or cook rice vermicelli until tender, then rinse and drain.
Cook minced meat with garlic, fish sauce, and a little chile until savory.
Whisk tamarind, lime, sugar, salt, and chile into a sour sauce.
Arrange noodles with lettuce, cucumber, herbs, and the warm meat.
Spoon sauce over the plate just before serving.
