Preserved Watermelon Rind
Preserved Watermelon Rind is an easy dinner. Made with 7 lb. watermelon rind, 3 lb. granulated sugar, 2 c. vinegar, 1/2 c. water and 1 tbsp. whole cloves, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Peel thin green rind from melon and remove the soft pink meat. Cut remaining pieces in 2-inch cubes; cover with water and cook until tender, then drain.
Combine the sugar, vinegar and 1/2 cup water in a large covered kettle.
Boil over a moderate flame 10 minutes.
Add cloves in a spice bag and simmer for 1 hour.
Add melon cubes and simmer gently for 1 1/2 hours, or until the melon is transparent.
Put the rind in sterilized pint jars.
Cover with hot syrup and seal.
