Potatoes Lyonnaise
Potatoes Lyonnaise is an moderately easy dinner. Made with 6 medium potatoes, 1/4 c. butter or lard, 2 tbsp. cooking oil, 3 medium onions, thinly sliced and salt and pepper, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Make a batch of creamy mashed potatoes; season them well with salt, pepper and butter.
Pile them in a great fluffy heap on a round platter.
Around the outer edge, make a wreath of crispy fried Danish bacon and fill the center with Frisih Stegt Log (recipe follows).
Have this very hot (you can slip it into the oven for a few minutes after it's arranged.)
Garnish platter with slices of cold pickled beets before serving.
