Potato Salad with Cooked Dressing
Potato Salad With Cooked Dressing is an moderately easy dinner. Made with 8 medium size potatoes, 1 medium onion, 2 eggs, well beaten, 1/2 c. sugar and 2 tbsp. flour, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Boil potatoes in skins until done.
Cool, peel and dice.
Dice onion and mix.
Add celery seed and salt to taste.
Beat eggs in top of a double boiler.
Mix flour, sugar and salt and add to eggs, stir often.
Gradually add vinegar to this mixture.
Cook over slow boiling water, stirring constantly to avoid lumps.
Cook until thickened and remove from heat; add milk and butter.
Mix well.
Pour over diced potatoes and chill for a few hours.
