Potato Mushroom Bake
Potato Mushroom Bake is an moderately easy dinner. Made with 6 to 8 medium potatoes (3 lb.), 1 clove garlic, 8 oz. fresh mushrooms, sliced, 1/2 c. butter or margarine, divided and 1 c. light cream, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Preheat oven to 350Β°.
Grease a 2-quart casserole dish.
Peel potatoes; cook with garlic in boiling salted water.
Meanwhile, saute mushrooms in 2 tablespoons butter until tender.
Drain potatoes; discard garlic.
Whip potatoes with 1/4 cup butter, cream, egg yolks, 1 1/2 teaspoons salt and dash of pepper.
Stir in mushrooms and parsley.
Spoon into casserole.
Melt rest of butter; toss with bread crumbs.
Sprinkle over potatoes.
Bake for 25 to 30 minutes.
Serves 8.
