Potato and Kale Soup
Potato And Kale Soup is an moderately easy dinner. Made with 1 whole chicken breast, skinned, boned and cut in 1 x 1/2-inch pieces, 2 tsp. olive oil, 1 1/2 lb. small red potatoes, thoroughly washed and quartered, 2 carrots, diced and 1/8 tsp. dried basil, this recipe delivers authentic, satisfying flavors. In large pot, combine potatoes, chicken and broth or water. Boil, skimming as necessary.
Cook at slow boil for 13 to 15 minutes or until tender.
Add olive oil, carrots, scallions, kale, beans, bay leaf, basil and parsley.
Add dash or two of Tabasco sauce if desired.
Boil, stirring occasionally, 5 to 6 minutes or until flavorful.
Remove bay leaf before serving.
