Pot Roast(Lo-Fat) is an impressive dinner. Made with 1 boneless lean beef roast (at least 1 1/2 lb.), 1 (14 1/2 oz.) can stewed tomatoes, chopped, 1/2 c. onion, chopped (1 medium), 1/2 to 1 c. tomato juice and 1 clove garlic, minced (can use more), this recipe delivers authentic, satisfying flavors. Spray cold Dutch oven.
Preheat over medium-high heat and then brown the meat on all sides.
Add tomatoes, chopped onion, tomato juice, bay leaves, garlic, bouillon cubes, basil and pepper. Reduce heat and simmer 1 hour, covered.
