Porketa
Porketa is an moderately easy dinner. Made with 1 (4 lb.) pork shoulder, 1/2 c. fresh parsley, snipped, 2 tsp. minced garlic, 2 tsp. dried dill weed and 1 tsp. fennel seed, crushed, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Debone meat and remove outside fat.
Fill with a mixture of the next 7 ingredients.
Roll roast jelly-roll fashion and tie with a string.
Rub outside of roast with mixture of last three ingredients.
Roast in a 350° oven for 35 to 45 minutes per pound or to an internal temperature of 170°.
Allow roast to stand for 15 minutes for easier carving.
Slice and serve on hard rolls.
