Polkagris
Polkagris is Swedish pulled peppermint candy, usually twisted into red-and-white sticks. The shine, snap, and clean mint flavor come from hot sugar worked while still pliable.

Boil sugar, corn syrup, and water to hard-crack stage with a little cream of tartar if using.
Flavor with peppermint and divide off a portion to color red.
Pull the clear candy until glossy white, then roll it with the red strip.
Twist into striped sticks while warm and cut into lengths.
Cool on parchment until firm and brittle.
