Pear and Red-Potato Salad
Pear And Red-Potato Salad is an moderately easy dinner. Made with 2 1/2 lb. medium red-skinned potatoes, 3 pears, cored and sliced, 2 medium celery stalks, thinly sliced, 1/2 tsp. salt and 2/3 c. bottled red-wine vinaigrette dressing, this recipe delivers authentic, satisfying flavors. In covered saucepan, cook potatoes, covered with water, 15 minutes or until tender.
Drain; rinse with cold water until cool. Quarter potatoes; place in large bowl with pears, celery, dressing, parsley, green onion and salt.
Toss until coated. Spoon into lettuce-lined salad bowl.
