Peanut Brittle
Peanut Brittle is an moderately easy dinner. Made with 2 c. sugar, 1 c. white corn syrup, 1/2 c. water, 1 tsp. vanilla and 2 c. raw spanish peanuts, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Cook sugar, corn syrup and water together to 250Β° or to hard ball stage.
Add butter and peanuts; continue cooking until syrup is golden brown and quite brittle when put in cold water.
Stir constantly to keep peanuts from sticking or burning.
Remove from heat; stir in vanilla and soda.
Stir quickly until it foams up. Pour out on well oiled surface.
When it has cooled, turn over and stretch thin.
