Pasta Primavera
Pasta Primavera is an impressive pasta dish you can prepare in about 1 hour 22 minutes. Made with c. carrots, cut in 1/2-inch chunks, c. broccoli, cut in small florets, c. zucchini (unpeeled), cut in 1/2-inch chunks, c. cooked macaroni and c. finely minced onions, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Steam vegetables until just tender-crisp (approximately 5 minutes for carrots and broccoli and 3 minutes for zucchini). Place in large bowl.
Add macaroni and onions and toss gently.
In a small bowl, combine mayonnaise, yogurt, Parmesan cheese, olive oil, pepper, basil, oregano and garlic powder.
Add vegetable mixture.
Toss gently until well mixed.
Chill.
Serves 8.
