Pasta E Fagioli
Pasta E Fagioli is an moderately easy dinner. Made with kidney beans, soaked in water overnight, oil, 2 cloves garlic, 200 grams tomatoes and 1 tsp. tomato paste, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Cook beans in water (add 2 tablespoons oil, 2 cloves and 1 bay leaf to water).
Saute chopped celery and minced garlic.
Add tomato, 1 teaspoon purΓ©e, pepper, 1/2 cup water and salt.
Boil slowly, then pour over beans (which should be well done).
Cook 15 minutes.
Remove and mash small amount of beans and then return to pot.
Add uncooked pasta.
Add oregano.
Bring to boil, adding more water, if necessary.
