Old-Fashioned Sugar Cookies

Sift first 3 ingredients; set aside.
Cream shortening and extract together.
Add sugar; beat until fluffy.
Add egg yolks, beating thoroughly.
Mixing until well blended after each addition, alternately add dry ingredients in fourths and a mixture of evaporated milk and lemon juice in thirds to the creamed mixture. Beat egg whites until stiff peaks are formed; fold into batter. Drop by tablespoon 3-inches apart onto a greased cookie sheet. Sprinkle with a mixture of sugar and cinnamon.
Bake at 375Β° for about 10 minutes or until edges are lightly browned.
Remove cookies to cooling rack.
Makes around 5 dozen.
