Old Fashioned Blueberry Pie
Old Fashioned Blueberry Pie is an moderately easy dinner. Made with 1/3 c. all-purpose flour, 1/8 tsp. salt, 4 c. fresh or frozen blueberries, thawed, 2 tbsp. low-fat margarine and 1 c. sugar, this recipe delivers authentic, satisfying flavors. Gently mix berries, 1/3 cup flour, salt and sugar; set aside. Mix milk and oil.
Stir into flour until it forms a ball (a food processor works great).
Divide dough in half and roll between sheets of waxed paper.
Peel off top piece of paper and turn into 9-inch pie pan.
Peel off other piece of paper.
Spoon blueberry mixture into pastry shell.
Dot with butter.
Repeat pastry procedure and gently place on top of pie.
Trim off excess and fold edges under.
Cut slits in top of crust and bake at 425Β° for 50 to 55 minutes.
Place strips of foil over edges of crust to prevent overbrowning.
