Oatmeal Raisin Cookies
Oatmeal Raisin Cookies is an impressive dinner. Made with 1/2 c. butter, 1 c. rolled oats, uncooked, 1/4 c. milk, 1 egg, beaten and 1 c. flour, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Melt butter in top of double boiler over simmering water; add oats and milk, stirring well.
Cover and cook 15 minutes.
Remove from heat; cool slightly; stir in egg.
Sift together flour, sugar, baking powder, soda, salt, cinnamon and nutmeg in a small mixing bowl; add to oatmeal mixture, stirring well.
Stir in raisins, pecans and vanilla.
Drop dough by heaping teaspoonfuls 2 inches apart onto greased cookie sheets.
Bake at 350Β° for 15 minutes. Cool slightly on cookie sheets.
Remove to wire racks to cool. Yields approximately 3 1/2 dozen.
