Munching Peanut Brittle
Munching Peanut Brittle is an moderately easy dinner you can prepare in about 1 hour 34 minutes. Made with c. raw peanuts, c. granulated sugar, c. white corn syrup, . salt and . butter or margarine, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Stir the peanuts, sugar, corn syrup and salt together in a 1 1/2 to 2-quart casserole.
Place in microwave oven and cook 7 to 8 minutes on High, stirring well after 4 minutes.
Add the butter and vanilla to hot syrup, blending well.
Return to oven and cook 1 minute more.
Peanuts will be lightly browned and syrup very hot.
Add soda to mixture and gently stir until light and foamy. Pour mixture on lightly greased cookie sheet.
Let cool 1/2 to 1 hour.
When cool, break into small pieces and store in airtight container.
Makes approximately 1 pound.
(If using roasted salted peanuts, omit salt and add peanuts after first 4 minutes of cooking.)
