Mingea's Prize Winning Pepper Relish
Mingea'S Prize Winning Pepper Relish is an moderately easy dinner. Made with 24 green peppers, coarsely ground, 1/2 c. salt, 7 or 8 medium onions, 1 qt. vinegar and 2 c. sugar, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Drain juice off ground peppers.
Add 1/2 cup salt to enough water to cover peppers.
Let sit 2 or 3 hours or overnight and drain.
Grind onions.
Mix with ground peppers.
Add vinegar, sugar, 1 teaspoon salt and mustard seed.
Cook over medium heat in heavy pot about 1 1/2 hours, until glazed looking.
If watery, dip some liquid off.
Seal in jars.
