Million Dollar Pickles
Million Dollar Pickles is an moderately easy dinner. Made with 7 large cucumbers, cubed, 2 red sweet peppers, cut into chunks, 3 green sweet peppers, cut into chunks, 12 yellow onions (medium size), cut up and 3 carrots, cubed, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Wash and cube peppers, onions, cucumbers and carrots.
Place all veggies in a large bowl. Cover with water and 1 cup salt.
Let stand at least 3 hours or overnight.
Put vinegar, sugar and spices in a large enamel pot; bring to a boil.
Add the veggies; again bring to a boil.
Ladle the veggies into hot jars.
Add the hot liquid to cover veggies.
Put tops on immediately and seal by immersing in a canning kettle or large pot of boiling water. Leave quart jars in for 10- minutes, pint jars for 5 minutes.
