Micro-Roux is an moderately easy dinner. Made with 2/3 c. vegetable oil, 2/3 c. flour, 2/3 c. chopped onions, 2/3 c. chopped green peppers and 2/3 c. chopped celery, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Put several cups of flour in a large, heavy pot and brown at 400Β° for about an hour, stirring every 15 minutes or so.
You may do this on top of the stove, stirring constantly for 15 minutes. Store in a jar in the cabinet.
Mix equal parts of flour and water or oil, stirring until smooth.
Add to gumbos, soups, stews or gravies.
