Mexican Rice
Mexican Rice is an moderately easy dinner. Made with 1/2 c. cooking oil, 1 c. rice, 4 cloves garlic, crushed, 12 black peppercorns, crushed and 1/4 tsp. cumin or comino, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Heat oil until hot in an iron skillet.
Add rice and stir constantly until it is nice and brown.
Remove from heat and drain off all the oil.
Add spices and stir briefly.
Add onion, tomatoes, pepper and water.
Stir well and bring to a boil.
Cover pot, lower heat and allow to simmer.
Do not stir.
Cook until it has absorbed all the liquid, being careful not to allow it to burn.
Serves 4.
