Meat Stuffed Eggplant
Meat Stuffed Eggplant is an moderately easy dinner. Made with 1 eggplant, 1/2 lb. ground meat (pork, turkey or beef, lean), 1/2 c. bread crumbs, 1/2 tsp. salt and 1/8 tsp. pepper, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Cut top but don't peel eggplant; remove pulp leaving 1/2 inch shell.
Parboil shell 3 minutes.
Combine chopped pulp with meat, crumbs and seasonings.
Stuff the eggplant with meat mixture. Replace top with toothpicks.
Brown green pepper, celery, onion and garlic.
Add tomatoes.
Season and simmer for 15 minutes. Pour sauce over and around eggplant in baking dish.
Bake at 350Β° in oven for 1 hour.
