Matalote
Matalote is an moderately easy dinner. Made with 2 lb. whitefish fillets, 1/2 c. parsley, chopped, 1 tsp. whole thyme, dash of mace and nutmeg and 1 1/2 tbsp. flour, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Cut fish into serving pieces and place in heavy pot with tight lid.
Add onions, parsley, mushrooms, thyme, salt, pepper and spices and almost cover with red wine.
(Can use white wine.)
