Marinated Carrots
Marinated Carrots is an moderately easy dinner. Made with 2 lb. carrots, 1 large onion, 1 large green pepper, 1 can tomato soup and 3/4 c. sugar, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Scrape, wash and slice carrots.
Cook until tender (do not overcook).
Drain well.
Chop onion and green pepper (coarsely). In a large bowl, add onion, green pepper and cooked carrots.
Mix together: tomato soup, sugar, oil, vinegar, mustard, Worcestershire, salt and pepper.
Pour the tomato soup mixture over carrots, etc.
Cover tightly and chill several hours or overnight.
Great for outings!
