Mamma's Peach Pickle Recipe
Mamma'S Peach Pickle Recipe is an easy dinner. Made with 10 lb. peaches (after peeling), 4 lb. sugar, 1 qt. vinegar and 2 tbsp. whole cloves, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Prepare fruit; let stand in lightly salted water while syrup is cooking.
Boil vinegar, sugar and spices together (spices in a loosely tied cotton bag) until mixture becomes a thick syrup. Drain salt water from peaches; add to syrup, cooking very fast until syrup covers peaches.
The syrup will not at first cover peaches, but after cooking a while, the juice comes out of the peaches and makes more syrup and also thins the first thick syrup. Keep peaches pressed down in syrup occasionally with a wooden spoon.
When done, place in hot jars and seal.
Makes about 3 to 4 jars (quarts).
